Summer would not be summer without grilling. Grilling would not be grilling without beef. And beef would not be beef without cattle farmers and ranchers. Here’s to all those who make grilling season possible.

So good. #meatloafrecipe #brookeappetit #beefitswhatsfordinner #easyrecipes ⁣ Ingredients~ ⁣ ⁣ 1 tablespoon olive oil⁣ 1.5lbs of ground beef/pork (pork optional) ⁣ 1 egg⁣ 1 cup of finely diced onion⁣ 2 minced garlic cloves⁣ ¼  cup of finely diced carrots ⁣ ¼  cup of finely diced celery (the top leafy part)⁣ 12 or so crushed saltine crackers⁣ 1 8oz can of tomato sauce⁣ (divided) 4 tablespoons of Ketchup (divided) ⁣ 2 dashes of Worcestershire sauce⁣ 1 teaspoon chopped fresh thyme⁣ 1 teaspoons kosher salt⁣ ½ teaspoon garlic salt⁣ ½ teaspoon seasoning salt⁣ ½ -teaspoon onion salt ⁣ 1-teaspoon black pepper ⁣ 1 teaspoon Italian seasoning ⁣ ⁣ Method⁣~ ⁣ Heat the olive oil in a pan. Add the onions, celery, carrots, and thyme and cook over medium high heat, stirring occasionally, for 7 to 8 minutes. Then add minced garlic and saute for another couple minutes. Allow to cool slightly. ⁣ ⁣ In a large bowl, combine your ground beef/ pork mixture with the rest of the ingredients. Do not mash or over mix, it will make your meatloaf tough.  Shape the mixture into a rectangular loaf on a casserole. Spread the rest of your tomato sauce and ketchup on top. ⁣ Cover with foil and bake for 1 ½ hours to 2 or until the internal temperature is 160 degrees. ⁣ ⁣ Optional* Surround your meatloaf with largely chopped, seasoned potatoes and zucchini for a one pan meal!
